Same. Had they gone sans-glasses, it would have just looked like regular Jadzia randomly wearing a white lab coat. The glasses make her Honey. Remember in the episode, this wasn't Jadzia playing on the holodeck. It was the computer projecting the crew's physical forms in Julian's secret agent simulation because their transporter patterns were using so much space, the rest of the station had to practically go into standby mode.
