I believe the phrase you meant was "moss-like organism", even a simple DNA pairing is made up of multiple compounds.We found a mosslike compound growing on an asteroid despite the vacuum of space. <crew member> is studying its molecular structure.

It’s referring to a rarely-seen compound (building) that was built by Bajoran contractors who were using an organic, moss-like material. The contractors stopped working on it because of the smell and left it lying around in space. Because of the lack of upkeep, the compound looks like growing moss.
Your crew is actually studying the building (compound), because of the amazingly intricate construction work. There’s even heated floors and a bidet.
So you see, the flavor text WAS right! ;-)
