None of the suggested...there is good gauntlet crew for every skill except for ENG. So I would like to see someone there who would qualify. Any version of: LaForge, Scotty, Data, Torres, O'Brien would be fine (please not Tucker).
Or someone more exotic: The Traveler, DaVinci, or Kurros (is he an engineer?) maybe?!
Could it be Defensive Phlox? They release him first in packs and then bring him to the gauntlet?

So, I'm going to suggest an iconic character, one who has made such an impact that they have made it into everyday language outside of the Trek universe(s), and that in true Trek tradition gave selflessly time after time after time for the greater good.
The names may not be well-known but over the years, and in all flavours of Star Treks, they have made so much of a difference that they will never know what their sacrifice meant. I'm sure there are cultural references (you can buy t-shirts even today) that are understood by millions.
They are defined by a colour, which these days doesn't sit well, but it is truly part of their legacy, and so ladies and gentlemen I nominate:
